Peanut Butter Cookies
  • 1 cup peanut butter-smooth or chunky
  • 1 stick of unsalted butter
  • 1/2 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1-1/2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • chopped peanuts (optional)

Cream together peanut butter, butter, and sugars until light and fluffy. Mix in egg and vanilla and beat well. Fold in dry ingredients. Shape into 1 inch balls and place on ungreased cookie sheet. Flatten with fork tins in a criss cross pattern and sprinkle with sugar. Top with chopped peanuts if desired and bake in 325 degree oven for about 10 minutes or until light brown.
