The Perfect Coconut Cake

  • 1 French vanilla boxed cake mix

  • 4 eggs

  • 1/3 cup vegetable oil

  • 1 cup of water

  • 1 tablespoon coconut extract

  • 1 cup of flake coconut

filling

  • 1-3.4 oz box of instant vanilla pudding

  • 2 cups of heavy cream

  • 1 tablespoon coconut extract

  • 1 cup flake coconut

frosting

  • 2 lbs powdered sugar

  • 2 sticks unsalted butter softened

  • 1/4 cup half and half

  • 1 tablespoon coconut extract

Mix cake ingredients except for coconut on medium speed for 3 minutes, fold in coconut and bake cake per box directions and let cool. Meanwhile mix filling ingredients except for coconut on high speed until light and fluffy. Fold in coconut and set aside in the fridge. Mix frosting ingredients on high until light and fluffy. When cake is completely cooled, fill layers with filling, frost with frosting and garnish with additional flake coconut. Serves 10-12
