Baked Potato Soup
  • 2 lbs. Frozen O'Brien potatoes
  • 4 Tablespoons vegetable oil
  • 1/2 cup of butter
  • 2 teaspoons each of salt and pepper
  • 3 cups milk
  • 1 cup cold water
  • 1/2 cup of flour
  • Bacon bits, sour cream, and cheddar cheese to taste

Fry potatoes in oil until they start to brown. Add enough water to cover potatoes and bring to a boil. Add butter, salt and pepper, and milk. Make a paste out of the water and milk and pour into soup. Cook until desired consistency. Remove from heat and add bacon bits, shredded cheddar cheese, and sour cream to taste. Garnish with chopped chives or parsley if desired.
